Absolutely Fabulous Turkey Burgers

" Turkey burgers are a delicious change of pace. Not to mention less fatty and better for you.
Slap these moist patties on the grill for a special summer treat. Don't forget the secret sauce.
INGREDIENTS:
3 pounds ground turkey
1/4 cup seasoned bread crumbs
1/4 cup finely diced onion
2 egg whites, lightly beaten
1/4 cup shopped fresh parsley ( fresh is the key here)
1 clove garlic, peeled and minced
1 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS:
1. In a large bowl, mix ground turkey , seasoned bread crumbs, onion egg whites,
parsley, garlic, salt, and pepper. Form into 12 patties.
2. Cook the patties in a medium skillet over medium skillet over medium heat, turning
over only once, to an internal temperature of 180 degrees f (85 degrees C)
Remember 2 important notes when making and forming a hand pressed burger.
do not over work the meat. Do not press into a ball on then press hard.
Just gently form into a patty with as little pressure as possible .
the more you work your meat you will break down the proteins and that will result into
a tough burger.. ( Not what you are looking for )
The other Tip is not to press down on the patty as it is cooking with your
spatula. As this will make the juices come out. Which will result in a dry burger.
Another NO NO...
And remember "Gut Apatit"!
