Absolutely Fabulous Turkey Burgers

" Turkey burgers are a delicious change of pace. Not to mention less fatty and better for you.
Slap these moist patties on the grill for a special summer treat. Don't forget the secret sauce.

INGREDIENTS:

3 pounds ground turkey
1/4 cup seasoned bread crumbs
1/4 cup finely diced onion
2 egg whites, lightly beaten
1/4 cup shopped fresh parsley ( fresh is the key here)
1 clove garlic, peeled and minced
1 teaspoon salt
1/4 teaspoon ground black pepper

DIRECTIONS:
1. In a large bowl, mix ground turkey , seasoned bread crumbs, onion egg whites,
parsley, garlic, salt, and pepper. Form into 12 patties.

2. Cook the patties in a medium skillet over medium skillet over medium heat, turning
over only once, to an internal temperature of 180 degrees f (85 degrees C)

Remember 2 important notes when making and forming a hand pressed burger.
do not over work the meat. Do not press into a ball on then press hard.
Just gently form into a patty with as little pressure as possible .
the more you work your meat you will break down the proteins and that will result into
a tough burger.. ( Not what you are looking for )

The other Tip is not to press down on the patty as it is cooking with your
spatula. As this will make the juices come out. Which will result in a dry burger.
Another NO NO...
And remember "Gut Apatit"!

Buttermilk Pancakes from Scratch .

This morning the kids wanted pancakes and I discovered that I was all out of pancake mix.
So I decided to make them from scratch.. This is what I found.

I added some Dark Chocolate Chips, which just made it FABULOUS!

Ingredients: Dry
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
3/4 teaspoon salt

3 cups buttermilk
1/2 cups milk
3 eggs
1/3 cup butter, melted

1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, beat together buttermilk, mik, eggs and melted butter.
Keep the two mixtures separate until you are ready to cook.

2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across
the surface and if it beads up and sizzles, its ready .

3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend.
Stir until it's just blended together. Do not over stir! If adding the chocolate chips
add at this time. Pour or scoop the batter onto the griddle, using approximately 1/2
cup for each pancake. Brown on both sides and serve hot.

Recipe added by Joanne,
I fixed these pancakes for my family and they had a thunbs up .
To make them a little healthier I did add 1 cup of Whole wheat flour
with 2 cups of the All Purpose.
Next time I will add pictures with my recipe ..

This blog was started as an idea between a few friends. We all love to cook and would like to share recipes, ideas and our cooking adventures with each other and anyone who would
like to join in the fun. Lets make the best of this and try to put up at least 1 recipe or story about cooking per month. I think I am going to try and blog more often.
Since several of us will share this blog, don't forget to sign your name to the end of each recipe and entry..
Have fun and remember to Cook with Love...
